How Do You Control Heat on a Live-Fire Plancha?

A circular plancha is useful because it creates a gradient rather than one uniform cooking temperature. The cook manages the fire and moves food through hotter and cooler zones.

Think in zones

The steel nearer the central fire typically receives more heat. Outer areas can be used for gentler cooking, holding or finishing depending on the specific cooker and fire size.

Control the fire before chasing the plate

Add small amounts of dry fuel gradually, allow the steel to respond and move food between zones. Repeatedly over-fuelling the centre can make the surface harder to manage.
